Why do We have Easter Eggs?
Easter eggs are part of the Easter holiday tradition. Eggs are said to symbolize the beginning of new life. We have Easter eggs to help symbolize life being reborn.

Kidding aside, you are right they symbolize fertility and as such the new beginning of the cycle of life.
